Veggie Cheddar Quiche

Breakfast for dinner, anyone? This veggie cheddar quiche is endlessly versatile, easy to make, and always a hit, whether it’s a lazy weekend brunch, a weeknight “I don’t feel like cooking” dinner, or something to stash in the fridge for grab-and-go lunches.

Loaded with fresh veggies, melty cheddar, and a fluffy egg filling, it’s the kind of recipe you can dress up with whatever’s in your crisper drawer. Use it to clear out odds and ends, swap the cheese for your favorite, or toss in leftover cooked meats if you’ve got them.

Pair it with a simple salad for a light meal, or some roasted potatoes if you’re feeling hearty. Either way, it’s a stress-free dish that proves dinner doesn’t have to be complicated to be delicious.

Notes

▶ Breakfast for dinner has become a regular rotation in our house, and this recipe anchors our meal. Pair with bacon or sausage, add a side salad, or complete with pancakes for dessert.

▶ Feel free to swap out the veggies to whatever else you like! Just make sure it’s no more than 3 cups. We’ve tried both sausage and mushrooms in this recipe, and it also came out well.
