Veggie Cheddar Quiche

When breakfast-for-dinner is on the menu.

Ingredients

  • 1 cup red bell pepper (diced)
  • 1 cup white onion (chopped)
  • 1 cup broccoli (chopped)
  • 5 eggs (large)
  • 1/3 cup Miracle Whip
  • 1/3 cup milk
  • 1 cup shredded cheddar cheese
  • 1 frozen, deep-dish pie crust

Instructions

  • HEAT oven to 375° F.
  • PREPARE vegetables by washing and chopping to desired size.
    1 cup red bell pepper,1 cup white onion,1 cup broccoli
  • COOK vegetables in a skillet on medium heat for 5 minutes, stirring occasionally, until crisp-tender. Remove from heat.
  • BEAT eggs, Miracle Whip, and milk in medium bowl with whisk until well blended.
    5 eggs,1/3 cup Miracle Whip,1/3 cup milk
  • STIR in vegetable mixture and cheese; pour into pie crust. Place on baking sheet.
    1 cup shredded cheddar cheese,1 frozen, deep-dish pie crust
  • BAKE 40 to 45 minutes or until center of quiche is set and top is golden brown. Let stand 10 minutes before slicing to serve.

Notes

▶ Breakfast for dinner has become a regular rotation in our house, and this recipe anchors our meal. Pair with bacon or sausage, add a side salad, or complete with pancakes for dessert.
▶ Feel free to swap out the veggies to whatever else you like! Just make sure it’s no more than 3 cups. We’ve tried both sausage and mushrooms in this recipe, and it also came out well.
